Healthy Recipe: Connie's Turkey Chili

Serves 12.

Perfect for a cold weather day, here’s my favorite turkey chili. I’ll be honest with you…I’m not fond of measuring, so throw in a little more or a little less of things for your preference.


INGREDIENTS:

1 pound ground turkey breast, cooked
1 can of hot chili beans
1 large, rough chopped onion
1 large garlic clove, minced
1 yellow pepper, rough and chopped
1 green pepper, rough and chopped
1 jalapeno pepper seeded, de-veined, and finely-minced
1 bottle Spicy V-8
1 large can of diced or stewed tomatoes
1 bunch fresh cilatro, chopped
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon chili powder
1 tablespoon olive oil
crushed red pepper to taste
black pepper to taste

DIRECTIONS:

1. Brown turkey, onion, and garlic in olive oil.
2. Add remaining ingredients, and cook on stove top for 45 minutes at medium-to-low heat or all day in a crock pot for REALLY tasty chili with a slow-cooked taste.

ADDITIONAL NOTES:

A serving of chili would be about a cup. This version, made with fresh veggies and turkey is very low in fat, and don’t forget the healthful benefits you get from all of the tomato action going on! Sometimes, we top our chili with crushed, blue tortilla chips (just a few), green onions, and shredded Monterey Jack cheese (be careful though, just a bit)! You can also try a dollop of low-fat sour cream…YUM!
